Cilantro-Lime Cauliflower Rice

This delicious side is easy to prepare and low on carbs.

Ingredients

  • 1 (12-ounce) bag cauliflower rice
  • 1 white onion, chopped
  • ½ lime
  • Salt to taste
  • Chopped cilantro to taste

Directions

  1. Mix a bag of frozen cauliflower rice with chopped onion on a sheet pan.
  2. Roast at 450 degrees for 15 minutes (or until browned).
  3. Squeeze with lime and top with salt and chopped cilantro.
