Black Bean and Eggplant Chili
This chili is a great source of fiber – and it’s vegetarian, too!

Ingredients
- 1 cup fresh eggplant cut into cubes
- 1 can beans
- 1 can diced tomatoes (14.5 oz.) or 2 fresh medium diced tomatoes
- ½ cup chopped onions
- 1 can (4 oz.) of diced green chiles
- 2 teaspoons paprika
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon olive oil
- 1 cup of water
- 2 teaspoon garlic powder
- *Optional dash of chili flakes
Directions
- In a saucepan, cook onions in olive oil for 5 minutes.
- Add eggplant, tomatoes, beans, green chiles, spices and water.
- Simmer for 15 minutes.
- For extra spice, top with chili flakes.* Enjoy!
