Black Bean and Eggplant Chili

This chili is a great source of fiber – and it’s vegetarian, too!

Ingredients

  • 1 cup fresh eggplant cut into cubes
  • 1 can beans
  • 1 can diced tomatoes (14.5 oz.) or 2 fresh medium diced tomatoes
  • ½ cup chopped onions
  • 1 can (4 oz.) of diced green chiles
  • 2 teaspoons paprika
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon olive oil
  • 1 cup of water
  • 2  teaspoon garlic powder
  • *Optional dash of chili flakes

Directions

  1.  In a saucepan, cook onions in olive oil for 5 minutes.
  2.  Add eggplant, tomatoes, beans, green chiles, spices and water.
  3.  Simmer for 15 minutes.
  4.  For extra spice, top with chili flakes.* Enjoy!
