Cool Beans Salad

As a side or as a meal this nutrient packed salad is sure to be a hit!

Ingredients

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon sugar
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ¼ teaspoon pepper
  • 3 cups cooked basmati rice
  • 1 (16-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1½ cups frozen corn, thawed
  • 4 green onions, sliced
  • 1 small sweet red pepper, chopped
  • ¼ cup minced fresh cilantro

Directions

  1. In a large bowl, whisk the first 8 ingredients.
  2. Add the remaining ingredients; toss to coat.
  3. Chill until serving. Makes 6 servings.
