Cowboy Salad
This salad is tasty, colorful, and can be put together in less than 15 minutes.

Ingredients
- 1 (15 oz.) can black-eyed peas or black beans, drained
- ½ (15-oz.) can corn, drained
- ½ bunch of cilantro, chopped
- 3 green onions, chopped
- 3 medium tomatoes, chopped
- ½ tablespoon oil (canola or vegetable)
- 1 tablespoon vinegar or lime juice
- ¼ teaspoon salt
- ¼ teaspoon pepper
- *Optional: 1 avocado, chopped
Directions
- Drain and rinse the black-eyed peas (or black beans) and corn. Combine all ingredients in a large bowl.
- Add cilantro, green onions, and tomatoes to the bowl and stir.
- Mix oil, vinegar or lime juice, salt, and pepper in a small bowl.
- Pour oil mixture over salad ingredients and toss lightly. Top with avocado*, if desired.
- Put leftovers in your refrigerator within 2 hours.
