Black Bean Soup

This soup is a great meal to make ahead of time and keep in the refrigerator for later. Make 2x the recipe for lots of leftovers!


Prep and cook time
Prep Time: 10 min. Cook Time: 15-20 min.


  • 2 cans black beans
  • 1 can chicken broth
  • ½ cup salsa or diced tomatoes
  • 1 tbsp chili powder
  • 6 tbsp cheese
  • 6 tbsp onion
  • 3 tbsp cilantro


  1. Wash hands with warm water and soap. Wash fresh vegetables before preparing.
  2. Wash one can of beans with a potato masher.
  3. Pour both cans of beans into medium saucepan.
  4. Add chicken broth, salsa, and chili powder.
  5. Bring to a boil and cook for 15-20 minutes, or until soup is slightly thickened.
  6. Top each serving with 1 Tablespoon cheese and 1 Tablespoon onion and fresh cilantro if desired.
